Jaipur is hands down one of my favorite food destinations in India. It’s maintained a great mix of the local cuisine and amazing cafes. I visit the city frequently for work, and by now have few places which are a must visit.

Rajasthan is more vegetarian friendly, but there are few dishes that will fire up the hearts (and bellies) of meat lovers. Laal Maas and Jungli Maas are two popular mutton dishes in the state. Both originated from royal households during hunting trips and are extremely spicy. Different places across the state have different versions of it — and that’s why we are here — to pick the best places for you.

Part of my Jaipur rituals is to have dinner at Handi — Rooftop Restaurant. This is an open rooftop restaurant as the name suggests, and is a delight to spend evenings at.

The show stealer here though is it’s Jungli Maas. This is as good as it gets. Jungli Maas is chargrilled mutton in the local way. One bite into it and the zest of dry chillies, masalas, and black pepper heavy marination hits your tongue. This is spicy and is not for the faint hearted. The texture of the meat is very coarse, but is soft and juicy inside. A definitely must do, when it comes to visiting Jaipur.
