Cilantro Lime Glaze

1 cup cilantro, chopped
¼ cup fresh lime juice (from 2–3 limes)

1 tbsp minced garlic, squeeze-strained
⅓ cup herb or garlic flavored extra virgin olive oil (such as Tuscan, Milanese Gremolata or Provençal)
Salt and pepper to taste

Makes 8–10 servings of glaze or dollops.

Hand-squeeze the minced garlic to remove excess water. Decide whether you want the olive oil flavoring to accentuate either the garlic or herbs — you must choose one or the other, anything else is wishy washy.

In a blender or food processor, combine the chopped cilantro, lime juice, minced garlic, salt, pepper and olive oil.

Brush, dollop or pour onto seitan, and garnish with, you got it (literally), cilantro! In the photo of the dish, I make a kind of cilantro halo or force field around my seitan with the cilantro garnish.
