Failed Chocolate Chip Pancake Scramble

vegan indulgence is not an oxymoron :)

Sometimes you make a pancake batter that tastes really great but just completely fails to hold its shape as a pancake. Not to worry! Just throw all the batter into a skillet and scramble it like eggs, then eat it like a hot pudding or something :) It actually tastes far better than restaurant overpriced hot molten chocolate ganaches.

Needless to say, for those with weight loss ambitions, this meal is best for a cheat day.

1 cup almond flour
2 tbsp ground flaxseed
1 flax egg (2 tbsp ground flax + 5 tbsp water x 5 minutes to gel)
1 tsp baking powder
2 tbsp monk fruit or stevia
1/4 tsp salt
1 cup nondairy milk
1 tbsp extra virgin olive oil
1 cup vegan keto chocolate chips
1 tsp vanilla extract
Additional cooking oil or spray

Makes 4 servings.

Make the flax egg: In a small bowl, mix 2 tablespoons of ground flaxseed with 5 tablespoons of water. Let it sit for a few minutes until it thickens and forms a gel-like consistency.

In a larger mixing bowl, whisk together almond flour, ground flaxseed, baking powder, stevia or monk fruit, and salt.

To the dry ingredients, add the flax “egg,” almond milk, extra virgin olive oil, and vanilla extract. Mix until well combined, then add in the vegan keto chocolate chips and stir once more.

Let the batter rest for 10 minutes.

Preheat a skillet or griddle over medium heat, and add the cooking oil or spray to make your cleanup work easier. When the skillet is heated, dump the batter in, stir it around the pan like scrambling eggs and cook for ~10 minutes, letting it thicken as moisture bubbles out of it. Periodically, scramble some more, and serve hot.
