Happy Baby Eggplant

This recipe takes its name from a yoga pose that is famous for making practitioners of that ancient art fart, or at least really want to while struggling to hold it in. Thus, this recipe is also a kind of homage to all new vegans whose gut biomes are adjusting!

It’s also a great meal to start cooking in the slow cooker when you go to bed at night, since it takes ~8 hours even though you probably won’t feel like eating baby eggplant for breakfast but who knows, you can always call it Morning Tagine! In which case, it does go well with low carb toast.

8 baby eggplants, quartered with ends trimmed off
1 can tomates broyées, ~800 ml
1 heaping tsp Italian mix dried herb
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin
1 tsp paprika (Hungarian or Latvian or Smoked)
1 tbsp stevia or monk fruit
1 tbsp herb flavored extra virgin olive oil
Salt and pepper to taste

Tomates broyées is just French for crushed tomatoes, but in my head I imagine Keanu Reeves pronouncing it like “So Crates” in Bill and Ted’s Excellent Adventure, in other words, ‘Toe Mates.’

Wash and trim the ends off the baby eggplant, then quarter them lengthwise. In a small slow cooker, add the crushed tomatoes and everything else except for the eggplant, and stir thoroughly. Then, add the eggplant.

Cook on low for ~8 hours while you are sleeping like a Happy Baby.
