Kimchi Fried Rice

1 package konjac rice, 398g
1 tbsp chili (or other) flavored extra virgin olive oil
2 cups scissors cut vegan kimchi

Makes 2 servings.

In a large skillet or sauté pan, heat the oil at medium heat. Add the konjac rice and cut up kimchi, stir thoroughly and cook for ~8 minutes. Konjac has a lot of water content and so the dish doesn’t need a lot of oil to cook, but it does take awhile to release the water.

Since I cook on nonstick surfaces, I don’t use high heat. Stir occasionally because it can be surprising how suddenly the mix starts to stick to the pan. Cook and stir until the mixture takes on a dryness and consistency that reminds you of regular fried rice!
