Low Carb Vegan Fruit & Chocolate Cobbler Recipe

Simple, Healthy & Effective

2 cups almond flour
¼ cup stevia or monk fruit
1 tsp baking powder
1 cup nondairy milk
2 flax eggs (2 tbsp ground flaxseed mixed with 5 tbsp water)
6 tbsp extra virgin olive oil
1 tsp vanilla extract
1 cup vegan keto chocolate chips
4 cups mixed berries (thawed from frozen works well)

Preheat the oven to 350°F/177°C.

Make the flax eggs and let sit for 5 minutes.

In a large mixing bowl, stir to combine the almond flour, sweetener (stevia or monk fruit) and baking powder. In a separate small mixing bowl, combine the oil, vanilla extract and nondairy milk. Add the flax eggs and wet mix to the dry mix in the large mixing bowl. Whisk it all together to get the batter as smooth and lump-free as possible.

This is how it looks going into the oven.

Grease a casserole dish. Add in the fruit first and top with the batter, then sprinkle the vegan keto chocolate chips on top. If using large fruit like strawberries, cut them up with scissors to smaller pieces. If using thawed from frozen fruits, drain any excess liquid before adding to the casserole dish.

Bake uncovered for ~45 minutes. Let it cool before indulging.

If you’re dietary goals are weight loss, this is great for cheat days.
