Unsalted Mixed Nuts
A handful of mixed unsalted nuts is a great low carb vegan snack! This is not so much a recipe as a reminder :) Another reminder: not too many handfuls, or too large a handful…..(there are a lot of calories and fat grams there, after all).
Dried Fruits
With dried fruits, it can be easy to get perhaps a bit too much sugar, because you’re basically eating miniaturized fruits and so the sugar in the large fruit is now compacted in much less volume.
In the context of a low carb diet, I find that dried fruits are mainly helpful after exercise, if I’m feeling a bit light headed and need a fast restoration to regular energy levels.
Runners and cyclists, amongst others, have coined the term ‘bonking’ to describe the feeling of having run out of the body’s glycogen and ‘hitting a wall’ where they can’t go any further. Dried fruits can be thought of, then, as a ‘fast debonker.’
It might be a good idea to hide them — like, find some dark inconvenient top shelf corner at the back of the panty — so they are not in easy reach. This way, you only resort to them when you need a healthy sugar hit.
