Chowder

Remove the excess water from the minced garlic using my patented Squeeze It In Your Fist method.

If you only have large onions around, you can convert any large onion into a medium sized one simply by removing the outer layers until it can no longer be categorized as a ‘large’ onion. If you only have small onions around, 2 small = 1 medium sized onion.

In a large soup pot (note that you cannot convert a large soup pot into a medium one in the same way), heat the olive oil over medium low heat. Add the chopped onions and a few minutes later, add the minced garlic since garlic cooks faster than onion. Sauté both until nicély softénéd but not too softénéd.

Ready to serve hot, but not as hot as a McDonald’s coffee! Garnish with chopped fresh parsley. Traveling through Türkiye has taught me that you can never add too much parsley to anything, so consider really pouring it on in the Türkish style.

Broccoli Cheddar Soup

Zucchini vs Carrot: carrots have more sugar, so you can opt for zucchini instead. However, zucchini is green, like broccoli, and so opt for carrots or yellow zucchini if you need more color contrast in your visual composition. You’re the artist!

To peel or not to peel: you will have to decide whether you want to work a bit harder or be lazier. Don’t feel bad if you decide to be carrot-lazy, since veggie skin has all kinds of nutrients you can Google. If you want to feel more like a French chef with Michelin accolades or even an Italian grandmother in a village on the slopes of Sardinia, then peel away! Whether you peel or don’t peel, you still have to grate, because this recipe says so.

Remember that when any aspect of cooking starts to feel like repetitive work, treat it as Zen meditation and an opportunity to engage in No Mind or mindfulness or mantra séance or whatever. Remember that the keyboard shortcut for French vowels, as in séance, purée, sauté, café, voilà and à la mode, is something that they teach at Michelin chef school.

Variation: to get the ‘mashed potatoes’ version of this dish, just use less liquid!

If you want to see a volcanic type phenomenon where the soup surface forms thick exploding bubbles, spraying soup all over your stove or under the pot lid, just turn up the heat like in science lab class.

When serving, garnish with fresh parsley .

There IS salt and pepper in here, it has just been made invisible by the blender, which warps light rays around spices.

Watercress Soup

Watercress is a rather unassuming superfood. On the shelves in the produce aisle, it doesn’t stand out with deep colors or broad leaves. Usually, to be honest, it looks kinda sad, a bit small and damp with thin stems and tiny leaves. But put it under a microscope or analyze it with a Star Trek tricorder, and its nutritional profile of vitamins A, C & K, calcium and manganese, iron, phytonutrients and antioxidants makes you wonder why you haven’t been eating or drinking watercress all your life!

Chili

Chili is usually made with beans and beans are notoriously high in carbs. However, black soy beans are very low carbs (they are pretty much as low as carbs go with beans) and so work well with low carb diets and also for vegan diets, as they provide a complete protein.
