Better than Takeout Cashew Chicken

My cooking challenge is going well — this is #18 of 24 food dishes that I’ve cooked (that I’ve never cooked before). You can read my initial cooking challenge here. I like hanging out with “TeeKay” — (The Kitchen) on the weekends when I’m hungry.

I subscribed to Averie Cooks recipes so when this email appeared, I knew I had to make it! It was Monday afternoon and I had the day off so I gathered the ingredients and laid them on the counter.

For the stir-fry: Cornstarch, salt, pepper, sesame oil, olive oil, broccoli, red bell peppers, frozen edamame, garlic, dry-roasted whole cashews, green onions, and boneless chicken.

For the sauce: soya sauce, honey, rice wine vinegar, Asian chili garlic sauce, and ginger.

I put on a pot of rice and then cut up the chicken breasts into bite-size pieces. I placed the chicken pieces into a big Ziplock bag and put 3 tbsp cornstarch, salt and pepper into the bag, sealed it, and gave a good shake to coat the chicken evenly.

I added 1 tbsp olive oil and 2 tbsp sesame oil and chicken to a large skillet and cooked it over medium-high heat for about 5 minutes, flipping and stirring in between to cook evenly until it was about 80–90% cooked.

Then I added the 2 cups of broccoli, 1 cup of diced red bell peppers, 1 cup of shelled frozen edamame (directly from the freezer), and 2 cloves of minced garlic. I cooked it for about 3–5 minutes until the veggies were crisp-tender and the chicken was cooked through, stirring in between.

For the sauce, I added 3 tbsp soya sauce, 2 tbsp honey, 1 tbsp rice wine vinegar, 1 tbsp Asian chili garlic sauce, and 1 tbsp diced ginger (or you can use 3/4 tsp ground ginger) to a bowl, stirred it and set it aside.

I added the cashews to the pan and stirred them in.
