My cooking challenge is going well — this is #18 of 24 food dishes that I’ve cooked (that I’ve never cooked before). You can read my initial cooking challenge here. I like hanging out with “TeeKay” — (The Kitchen) on the weekends when I’m hungry.

I subscribed to Averie Cooks recipes so when this email appeared, I knew I had to make it! It was Monday afternoon and I had the day off so I gathered the ingredients and laid them on the counter.

For the stir-fry: Cornstarch, salt, pepper, sesame oil, olive oil, broccoli, red bell peppers, frozen edamame, garlic, dry-roasted whole cashews, green onions, and boneless chicken.

For the sauce: soya sauce, honey, rice wine vinegar, Asian chili garlic sauce, and ginger.

I put on a pot of rice and then cut up the chicken breasts into bite-size pieces. I placed the chicken pieces into a big Ziplock bag and put 3 tbsp cornstarch, salt and pepper into the bag, sealed it, and gave a good…
