Quick & Easy Parmesan Pasta
2022 Cooking Challenge (#11 Parmesan Pasta) “I can’t believe I cooked it!”

My cooking challenge continues — this is #11 of 24 food dishes that I’ve cooked (that I’ve never cooked before). You can read my initial cooking challenge here. My relationship with “TeeKay” — (The Kitchen) is improving and I’ve been trying to spend more time with TeeKay now that she’s growing on me.
My son loves pasta. White pasta with butter and cheese — that’s it. Simple.
A simple dish to make!
Tonight I decided to make up my own pasta and add flavor and green. I put some spaghetti noodles into a pot for boiling, put another pot on the stove for broccoli florets, and sauteed some onions and garlic with butter in a pan for two minutes. It’s all about timing — as I tend to burn things, I made sure to set the onions and garlic aside while the pasta and broccoli were boiling.
Once the pasta was done, I drained it then added it to the pan and stirred it in with the onions and garlic, added freshly grated parmesan cheese and broccoli, and combined it with the noodles. I topped it off with extra parmesan and served it to my son.
For my own plate, I garnished it with fresh tomato, parsley, chili flakes, and parmesan.
The taste test
It looks good, Mom.
After one bite, he said,
“Can I have some spaghetti sauce on it? It’s kind of bland.”
After I took a bite, I realized it needed salt and flavored my own plate to taste and added some chili flakes. I told him I wasn’t going to make any (f*cking) spaghetti sauce. TeeKay is growing on me — but I don’t like her that much.
My son finished his plate, gave it a 3 out of 5 rating (average), said thank you, and put away the dish.
Overall, it was an easy, tasty, quick, affordable dish to make that I’d make again, and — I can’t believe I cooked it!
