2022 Cooking Challenge (#21 Chicken Tacos) “I can’t believe I cooked it!”

My cooking challenge continues— this is #21 of 24 food dishes that I’ve cooked (that I’ve never cooked before). You can read my initial cooking challenge here. I’ve hit a slump in my cooking journey and I’m less charged up about cooking than I was at the start — aka — I’m getting lazy. With summer here and the warmer weather, I want to hit the beach, go ocean swimming, read my book in the sunshine. I don’t want to think about cooking or spend time with TeeKay (“the Kitchen).

But when I asked my son what I should make for dinner, he said,

“Mom, can you please make tacos? You need rice, chicken, cheese, salsa, and sour cream. Then you put it all in a wrap. We ate them at summer camp and they were so yummy.”

“That’s it? That sounds super easy.” I replied. I picked up my lazy cooking butt because this was a meal I could master and a perfect choice to recharge my cooking challenge.

Here’s all it takes to make Super Quick & Easy Chicken Tacos:

Ingredients: rice, chicken, cheese, salsa, sour cream, soft tortilla wraps

Cooking: First I cooked a pot of brown rice (but you can use any type)and to make things quicker, I purchased a cooked seasoned chicken breast (you can use leftover chicken or cook your own). That’s it for the cooking bit.

Prep: a) I shredded the chicken breast into small pieces and b) grated some marble cheese.

Arranging the bowls: I put each of the ingredients into separate bowls.

  1. cooked rice
  2. cooked shredded chicken
  3. grated cheese
  4. salsa
  5. sour cream

Assembly:

I layered some rice, then chicken, grated cheese, salsa and sour cream on the the tortilla wrap. Dinner is done!
