- milk
- sugar
- cooked
- thickened with cornstarch
How is Mousse made?
- milk
- sugar
- cooked
- thickened (NO cornstarch) by folding in beaten cream or beaten egg whites
What’s the difference?
Mousse is the lighter, fluffier cousin of pudding. Its lighter texture comes from whipping air into the mixture. It gets its airy consistency by folding whipped egg whites or whipped cream into the base mixture.
- Thickening — cornstarch (pudding) vs beaten cream / egg whites (mousse)
- Texture — semi-solid (pudding) to airy (mousse)
- Add-ins — extras inside (pudding) vs plain by itself (mousse)
