It’s Cozy Season
By: Bethany Del Begio, RD
If you enjoyed a big Thanksgiving dinner this week I hope you are reaping the benefits of lazy leftovers and lots of turkey sandwiches. Along with leftovers, I also hope you have some time to sit back and recharge before the holiday season arrives. December is one of the busiest months of the year, and no doubt the month I spend the most time in the kitchen.
Whether you plan on filling your December calendar with holiday dinner parties or cozying up with comfort meals at home, we have a wonderful selection of new recipes to get you through the season.
This Spiced Pork, Apple, Celery & Cranberry Stuffed Acorn Squash is rich and savory with a subtle hint of sweetness. It’s also irresistibly festive.
I feel like this Cannellini Bean Sauté with Mushrooms, Leeks, Pine Nuts & Goat Cheese is begging to be eaten on a cold day. It’s loaded with warm, earthy flavors that will warm you up from the inside out.
This Warm Bacon, Potato, Leek, Goat Cheese & Arugula Salad with Thyme would make a perfect addition to any holiday spread. Not your average potato salad… it’s light, full of texture, and loaded with peppery greens.
Last but not least, this Spicy Shrimp Curry with Tomatoes, Spinach & Cilantro over Rice is my new comfort meal of the season. It gives me that fuzzy sock kind of cozy feeling, so I’ll be eating this one all winter long.
