It’s Patio Season!

Happy Friday and even better, happy April! One of my favorite parts of this time of year is watching restaurant patios slowly come to life. Seeing folks bundled up in slightly chilly air on a sunny spring day, sipping a drink and chatting away. It just feels so nice to be able to eat and drink outside again.
If you are lucky enough to have an outdoor space at home, this Southwest Salmon Chowder with Potato, Corn, Bell Pepper & Avocado would be the perfect cozy spring patio meal. It’s super hearty and hits all the right spots.
Other recipes to consider, you don’t want to miss this mouth-watering Cajun Shrimp-Sausage Sauté with Celery, Zucchini, Bell Pepper & Rice. This one went straight to my favorites folder and I’m serious when I say plan to make extra for seconds.
This Chicken, Apple & Squash Skillet over Couscous with Spinach Salad is another keeper if you’re looking to get a little more creative with your chicken. The tart granny smith apples pair perfectly with the earthy butternut squash and it’s nice and easy to put together.
