Keep On Keepin’ On

Hello again! I hope January has been treating you well and you’ve settled into the rhythm of the new year. As I’m sure you can agree, the pandemic exhaustion is feeling pretty real at this point. But the world keeps spinning and once again we are off to the races with another week of meal planning. And of course, our chefs have got a wonderful selection of new recipes for all you meal planning savvy souls.
First thing’s first, I can’t take my eyes off this Roasted Halibut with Asparagus, Tomatoes & Lemon-Caper Dill Sauce. Halibut is definitely not on my typical weekly menu, so this one is a ‘treat yourself’ kind of experience that I am very much looking forward to. I wouldn’t pass up the opportunity to have a crisp glass of white wine with this ensemble.
This Spaghetti al Limone (Lemon Pasta) with Basil & Garlic-Roasted Veggies is a great weekday staple. It’s super simple, light, and fresh. The perfect end to a long day.
And last but certainly not least, this Spiced Veggie, Lentil & Chickpea Soup (Harira) with Cilantro Yogurt is an absolute must try. I’m a sucker for Moroccan soups and it’s not hard to see why. A warmly spiced, hearty lentil soup that feels like a long hug from someone you dearly love? I’ll never say no.
