Autumn Bites

Hello again! My kitchen has been a bit of a whirlwind lately, and I suspect many of you may be feeling the same way. It’s the season of cozy baking, roast chickens, and of course Thanksgiving. Whether it’s the comfort of standing next to a warm oven or the nostalgia that comes with autumn flavors, I never mind spending a little extra time in the kitchen during this time of year.
We’ve also been busy in the kitchen working on some fantastic new recipes for you. These Creamy Cashew Zucchini Noodles with Vegan Sausage, Artichoke & Spinach have reminded me how badly I love a good ‘zoodle’ dish. One of my favorite ways to cook with squash, they’re super simple and perfect for a meatless Monday.
I also can’t get enough of this Caramelized Onion Grilled Cheese with Creamy Honey-Mustard Mixed Salad. Grilled cheese is a near perfect food on it’s own but I can’t deny that adding caramelized onions gives it an extra something special.
As for Sunday lunch, you can find me digging into this “Tuna Melt” Quesadillas & Tomato-Carrot Soup with Parsley. It’s such a cozy, comforting meal that I wouldn’t even mind if it rains.
