Recipes for Summer’s End

I wore my first turtleneck of the season the other day which, as always, felt a little bittersweet. Still there’s something about the start of a new season, especially fall, that feels like a fresh start. So, since I don’t have a choice either way, I’m ready to welcome fall with open, turtle-neck-laden arms (With the help of some comforting dishes of course).
At the top of my list are these Cheesy “French Onion” Chicken Thighs with Mushrooms, Thyme & Parsley. French onion soup is one of my favorite comfort meals, and this chicken thighs version is every bit as comforting, cheesy, and delicious.
Every year as fall approaches I am always on the hunt for some new lunch inspiration. I currently have my eye on this Salmon & Goat Cheese Salad Sandwich with Tapenade-Dressed Greens and this Macaroni Salad with Tuna, Crunchy Veggies & Olives over Dressed Greens may also be a new lunch time staple.
Last but not least you can find me wrapping up my day with this “Peaches & Cream” Greek Yogurt Parfait with Pecans. Because embracing fall is great but I’m still clinging to every last day of peach season too.
