Spring Has Sprung!

Spring has practically sprung (2 more days?!) and I am breathing a deep sigh of relief knowing that the days are getting longer and warmer air is on its way. There is a lot going on in the world and I think we all have a certain heaviness in our hearts as we feel powerless to the events unfolding around us. I hope you can find some solstice and escape in getting outside for a long walk, curling up with a good book and some hot tea, or getting busy in the kitchen and trying out a new recipe. Whatever it is that helps you unwind and recharge.
One of my favorite perks of spring is the official start of pineapple season. They’re sweeter, they’re juicer, and I can’t get enough of them which is why these Grilled Scallop Tacos with Wilted Cabbage, Guacamole & Pineapple Salsa will be on my menu all season long.
No matter what time of year anyone who knows me will tell you how in love with mac and cheese I am. Maybe it’s the sweet childhood memories of helping my mom stir in the cheese or maybe it’s just because it’s so undeniably comforting and delicious.
