’Tis the season (the other season)
Written by: Bethany Del Begio, RD
It’s the season of so many wonderful things. Leaves starting to turn into warm colors. Driving home from work as golden hour begins. Grilling outside in the crisp fall air with a glass of red wine. Wool socks and sweatpants. Even football season has me feeling sentimental about fall this year.
I hope you have been able to embrace the season as well, whether you are a football fan or not. A little cooking inspiration never hurts either right?
Now that summer salads are officially off the table, this Romaine Salad with Crispy Smoked Salmon, Egg & Lemon-Caper Dressing will make the perfect replacement. The smoked salmon brings a ton of flavor and the radishes give a nice little finishing kick.
This Fresh Creamed Corn Fettuccine with Lettuce, Cucumber & Tomato Salad is another new favorite of mine. I can never have enough pasta recipes in my repertoire and this one has given me a whole new appreciation for corn season.
And lastly, this Italian Lamb Chops with Eggplant-Zucchini “Caponata” & Pine Nuts makes me feel like my Italian nonna cooked me Sunday night dinner. I don’t really have an Italian nonna but if I did, I imagine she might cook me something like this. Bellissimo!
