Happy 2022! January is a mixed bag of feelings for me, especially when it comes to cooking. I always have a bit of residual cooking fatigue from the holidays and January seems to be one of the busiest months of the year with not a lot of time to cook. Yet I also find myself wanting to seek out a little bit of meal inspiration for the new year.

So, if you’re also feeling like you want to save a little extra time and energy in the kitchen but still want some new meal ideas, check out Mealime’s new “Super Simple” recipe category. These recipes use some pre-prepared products like pre-chopped veggies or bottled salad dressings to cut down on prep time.

I’m going to be making double portions of this Indian Potato-Cauliflower Curry (Aloo Gobi) with Cucumber Raita & Naan on the regular because it’s just that good and I know I’d regret not having leftovers.

I’m not typically a morning person or much of a breakfast person but there’s something about this Mixed Berry-Lime Smoothie Bowl with Banana & Granola that just makes me smile. If you have kiddos that aren’t big on breakfast, this is something they’ll probably love to get involved with making and putting the finishing touches on. Smoothie bowls for the win!
