Breaded Chicken + Sweet Potato Pancakes + Roasted Brussels Sprouts

A delicious combination of protein + veggies + healthy carbs.

Breaded Chicken Thighs

This recipe is inspired by Anne Francis Heaton’s original recipe, which contains only salt and pepper as seasoning.

Ingredients

  • 1.25 pounds boneless skinless chicken thighs
  • 1/4 cup breadcrumbs
  • 1/4 cup grapeseed oil
  • 1egg
  • 4 tablespoons all-purpose flour
  • Salt to sprinkle
  • Pepper to sprinkle
  • Onion salt to sprinkle
  • Garlic powder

Roasted Brussels sprouts

Ingredients

  • 1.3 pounds of brussels sprouts
  • 1/2 teaspoon of chili flakes
  • 1/4th teaspoon of salt
  • Pepper to sprinkle
  • 2 tablespoons of olive oil

Sweet Potato Pancake

Ingredients

  • 1 six ounce pack of sweet potato pancake mix
  • two eggs
  • one and a 1/2 cup of cold water
  • 2 tablespoons of vegetable oil
  • Apple sauce for serving on the side
  • 1 tablespoon of oat milk

Steps

  • Preheat the oven to 350 °F. Keep a baking dish ready.
  • Warm up 1/4 cup of grapeseed oil in a skillet
  • Place all the chicken thighs on a plate and dust both sides with 4 tablespoons of all-purpose flour. Whisk one egg in a bowl and pour over the chicken thighs to completely coat them.
  • Have 1/4th cup breadcrumbs ready in a separate bowl. Coat each thigh with breadcrumbs and transfer to the skillet.
  • Season each side of the chicken as you flip it with some salt + pepper + onion powder + garlic powder.
Breaded chicken
  • Meanwhile, prepare brussels sprouts for roasting. Chop off the ends of Brussels sprouts and mix them well with 2 tablespoons of olive oil + 1/4 tablespoon of salt + 1/2 teaspoon of chill flakes. Sprinkle some pepper. Transfer them to the oven and set the timer for 20 minutes.
Seasoned Brussels Sprouts
  • Transfer the fried breaded chicken into a baking dish and in the oven for the timer set on your phone for 15 minutes.
  • Warm up 1 tablespoons of vegetable oil on a flat griddle. Whisk two large eggs in a bowl, add 1 1/2 cup of cold water + 1 tablespoon of oat milk (adds creaminess) and stir. Add the pancake mix. Instructions are also available on the back of the packet.
Sweet Potato Pancake Mix
  • Scoop out 1/8 cup of the mix and spread out on the griddle. Flip and cook on both sides. Oil the griddle with the remaining grapeseed oil as you pour out more pancakes on it.
Sweet Potato Pancakes
  • If the temperature on chicken thighs in the oven reads 165F, then it is ready.
  • Increase the temperature of the oven to 400F and set another timer for 10 minutes as brussels sprouts are still roasting.
  • If the mixture is thick, add 1/8 cup of water as you go to thin it down to the consistency you like to work with.
  • Remove the Brussels sprouts from the oven and check if they are roasted per your liking. You can leave them in the oven for 6–7 minutes more.
  • Serve the complete meal with some apple sauce for the pancakes and honey mustard for the breaded chicken. It serves four.
