A healthy version of Calzone meal
Calzone + Guacamole + Tomato dip

This recipe serves four.

Calzone

Ingredients:

Dough

  • 2 cups all-purpose flour
  • 1 cup lukewarm water
  • 1/2 packet instant yeast
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 egg

Filling

  • 2 carrots sliced in coins
  • 2 tbsp tomato paste
  • 1 onion chopped
  • 2 crowns of broccoli separated in small florets
  • Shredded mozzarella cheese
  • 2 ounces of prosciutto
  • 4 slices of provolone cheese
  • 2 handfuls of spinach
  • 1 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper

Guacamole

Ingredients:

  • 2 large avocado
  • 2 limes juiced
  • 2 tbsp finely chopped cilantro
  • 1 tsp garlic powder

Tomato dip

Ingredients:

  • 1 cup tomato sauce
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp vegetable oil
  • 2–3 tbsp vegetable broth
  • 1/4th tsp salt

Steps:

  • In a bowl, mix the 2 cups all-purpose flour + 1 cup lukewarm water + 1/2 packet instant yeast + 1 tsp salt + 1 tbsp olive oil. Mix until it starts to come together. Form a ball and knead it for 2–3 minutes. Brush it with the remaining 1 tbsp of olive oil.
  • Cover it with a cloth and let it sit and rise for an hour.
  • In a medium bowl, mash the avocados + juice of 2 limes + 1 tsp garlic powder + 2tbsp finely chopped cilantro. Cover and set aside.
  • In a small skillet, warm up 1 tsp vegetable oil. Add 1 cup tomato sauce + 1 tsp basil + 1 tsp oregano + 1 tsp salt + 1 tsp pepper. Stir the sauce around. Thin the consistency with 2–3 tbsp of vegetable broth.
  • When there are 30 min remaining on your timer for the dough to be ready, start preparing the filling.
  • In a skillet, warm up 1 tbsp of olive oil and add the chopped onion and tomato paste + 1 tsp salt. When the onions start to brown, add broccoli florets and coined carrots. Add 1 tsp of black pepper and continue to cook for 4–5 minutes. Remove from the heat and let it cool for 10 minutes. The vegetable filling is ready.
  • Preheat the oven to 425 degrees F.
  • Section the risen dough into 4 equal parts. Roll each part flat 1/3rd-1/4th inch thick. Layer half the part with tomato sauce+ prosciutto slices + provolone cheese + the vegetable filling + raw spinach and mozzarella cheese on top.
  • Leave a border around the edge while layering. Whisk the egg and apply it on the border before folding the other side over. Press the edges together and brush lightly with the egg wash. Make incisions on the top for the steam to escape.

Transfer it to the oven and bake for 20 min until the top looks golden brown.

Serve the Calzone + tomato sauce + Guacamole for a complete meal.

It takes 60–90 minutes to prepare the complete meal.
