Chicken Schnitzel + Gluten Free Spätzle + French cut beans

This recipe serves two.

Ingredients:

Chicken Schnitzel

  • 1.5lb (0.68 kg) chicken breast (2 breasts)
  • 2 eggs
  • 1 cup (0.24 l) breadcrumbs
  • 1/4th cup Parmesan
  • 1/4th cup of gluten-free all-purpose flour
  • 1/4th cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon basil

Gluten Free Spätzle

  • 1 cup (0.24 l) gluten-free all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 teaspoon chives
  • 1 egg
  • 1/4th cup oat milk
  • 1+1/2 cup water
  • 1 tablespoon butter
  • 1 teaspoon olive oil

On the side

  • French cut green beans

Steps:

  • Preheat the oven to 350 degrees Fahrenheit (176.67 °C). Keep a ceramic dish ready.
  • Slice the chicken breasts into two pieces. Wrap each piece separately in a cling wrap and pound with a meat tenderizer’s nails side till they look like below.

  • Dust the meat with 1/4th cup of gluten-free all-purpose flour. Whisk two eggs in a separate bowl. Pour the egg on the meat.
Meat coated with flour + egg in the same dish. No need for the three plate system.
  • Warm up 1/4th cup olive oil in a skillet.
  • Prepare a mix of 1 cup (0.24 l) of breadcrumbs + 1/4th cup Parmesan cheese in a bowl. Coat each piece of chicken breasts in this mix and transfer to the skillet.
Before and After
  • Spread 1 teaspoon of salt + a teaspoon of basil on both sides of the breasts as you flip them in the skillet. Transfer them to the ceramic dish once they start looking crisp. Move the dish to the oven and set the timer for 15 min.
  • Place 4 cups (0.95 l) of salted water to boil in a saucepan.
  • Mix 1 cup (0.24 l) of gluten-free all-purpose flour + 1 teaspoon salt + 1 tablespoon cornstarch + 1/4th cup oat milk + 1/2 cup water + pinch of paprika. If the mixture is thick, add a tablespoon of water as you go. If it is runny, add more flour. The batter’s consistency is similar to pancake’s.
Batter
  • Warm up a tablespoon of butter + 1 teaspoon olive oil in a separate skillet.
  • Grab a cheese grater and hold it/place it over the boiling water. Pour the batter over the grater so as it falls in the boiling water in the form of droplets. If your batter is thick, this process will be difficult, therefore use your discretion.
  • When the tiny droplets style dumplings float at the top, they are done. Strain them and transfer to the warm skillet. Sauté them and add a teaspoon of chives.
  • Remove the schnitzel from the oven and if the temp reads 165 degrees Fahrenheit (ca. 74 °C), then it is done.
Schnitzel is ready
  • Serve hot spätzle with the schnitzel and French style cut green beans on the side.
Dinner is ready
