Lemon Butter Salmon + Scalloped Potatoes + Steamed Green Beans

This recipe serves four.

Lemon Butter Salmon

Ingredients:

  • 2 lb Salmon
  • 2 tbsp fresh lemon juice
  • 1 tsp dried dill seeds
  • 1 tsp dried rosemary (2 sprigs of fresh rosemary)
  • 1 tsp salt
  • 1/4th tsp black pepper
  • 4 garlic cloves
  • 1 tbsp melted butter
  • 1 tbsp olive oil

Scalloped Potatoes

Ingredients:

  • 4 potatoes
  • 3 tbsp all-purpose flour (use 1:1 measure gluten-free flour if avoiding gluten)
  • 1 tbsp butter
  • 2 gloves of garlic
  • 1/4th cup chicken broth
  • 1/3rd cup oat milk
  • 1 tsp salt
  • 1/4th tsp pepper
  • 2 tsp chives
  • 4 tbsp Parmesan cheese

Steamed Green Beans

Ingredients:

1 pound green beans

Steps:

  • Preheat the oven to 400 degrees F
  • Warm up a skillet and add 1 tbsp butter in it. While the butter is melting, finely chop/mince 2 cloves of garlic and add to the pan. Add 3 tbsp all-purpose flour + 1tsp salt + 1/4th tsp pepper. Whisk it around in the pan while adding 1/4th cup chicken broth to it to avoid lumps. Add 1/3rd cup oat milk while whisking the mixture around for smooth sauce. Set it to simmer.
  • Wash + peel + slice the potatoes into 1/8th inch thickness. Lay out 1 layer flat in a baking pan. Pour half the sauce + 2 tbsp Parmesan cheese + 1 tsp chives. Lay out another flat layer of the potatoes and pour the remaining sauce covering every inch of the dish. Sprinkle the remaining 2 tbsp of Parmesan cheese + 1 tsp of chives.

  • Bake for about 45- 50 min in the oven until the top looks brown and sauce bubbles.
  • In another roasting pan spread out aluminum foil covering corner to corner.
  • Lay out salmon and pat dry with paper towel.
  • In a small bowl mix 1 tbsp olive oil + 1 tbsp melted butter + finely chopped/minced 4 cloves of garlic + 1 tsp dried dill seeds + 1 tsp dried rosemary + 1 tsp salt + 1 tsp pepper + 4 tbsp fresh lemon juice. Mix it well and pour over the length of salmon in the roasting pan.
  • Fully cover the roasting pan with another piece of aluminum foil and bake in the oven for 17–18 min. It is done if it is flaky.
  • Cut and trim the edges of 1 pound of beans, place them in cold water. Steam them covered for 4–5 min, as that retains the crunchiness, in the microwave. Start prepping the beans when you remove the salmon from the oven, and place them in the microwave right before you remove the scalloped potatoes from the oven, thus bringing the whole meal together at the same time.

It takes an hour to make the complete meal with minimal cleanup.
