Pasta + Focaccia bread + Salmon + Broccoli

Ingredients
Baked Salmon
- 2 frozen Salmon Fillets
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
Pasta
- 12 oz angel hair pasta noodles
- 1/4th tsp chili flakes
- 1 pint cherry/grape tomatoes
- 2 handfuls spinach
- 4 tbsp Olive oil
- 1.5tbsp Basil
- 1/4 tsp black pepper
- 8 cloves of garlic
- 1 tsp salt
- At least 2 tbsp Parmesan Cheese for garnish

- 3 cups broccoli florets steamed
- Store bought focaccia bread
Steps
- Preheat the oven to 350 degree Fahrenheit.
- Meanwhile, place a large pot of water to boil with 1 tsp salt.
- Slice the grape tomatoes in half. Toss them in 2 tbsp of olive oil + 0.5 tbsp basil. Roast them in the oven for 10 minutes.
- Immerse the frozen Salmon fillets in water and let them thaw for maximum 10 minutes.
- Place a skillet on stove top with 2 tbsp olive oil.
- Sauté 2 handfuls of spinach + 8 cloves of garlic + 1 tbsp basil + 1/4th tsp chili flakes + 1/4 tsp black pepper+1tsp salt in the skillet for 5–7 minutes till spinach has wilted. Keep the stove top on low.
- Alongside, put the pasta in the boiling water and let it cook for 5–7 minutes.
- Retrieve the cherry tomatoes from the oven and add to the skillet. Increase the oven temperature to 400 degrees Fahrenheit.
- Lay out Salmon fillets in a baking dish and sprinkle 1/4 tsp black pepper + 1/4 tsp salt and place it in the oven for 10–11 minutes.
- Add the pasta noodles to the skillet and toss everything around. Use the pasta water if needed to mix everything well for 3–4 minutes.
- Steam the broccoli florets by submerging them in 4 cups of water and microwaving for 4 minutes.
- Get the store bought focaccia bread ready by freshening it up in the already hot oven for 3–4 minutes.
- Remove the salmon from the oven, check the temperature (135 degree). Serve it with the pasta + steamed broccoli + warm focaccia bread.
