Whole Wheat Sausage Pasta + Steamed Broccoli

This recipe serves four.

Whole Wheat Sausage Pasta

Ingredients:

  • 12oz spicy sausages
  • 12 ounces whole wheat pasta spaghetti
  • 9oz tomato basil sauce (we used Whole Foods Organic)
  • 2 handfuls of fresh spinach
  • 1 green bell pepper
  • 1/2 big red onion
  • 1 tablespoon olive oil
  • 1 teaspoon rosemary
  • 1 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1/4th teaspoon pepper
  • 2 teaspoon salt
  • 1/2–1 cup chicken broth
  • 4 garlic cloves minced
  • Grated Parmesan for garnish
  • 2 broccoli heads steamed

Steps:

  • Warm up 1 tbsp of olive oil in a skillet and fry the broken up sausages till they are no longer pink. Set them aside.

  • Chop a 1/2 of a big red onion length wise and fry in the same skillet(no need to add oil, the sausage juice adds flavor). Add 4 cloves of minced garlic + 1 green bell pepper, cut up length wise + 2 handfuls of spinach in the skillet. Sauté the mix.

  • Put a large pot of water to boil with 1/2 teaspoon of salt.
  • Add the whole 9oz jar of tomato basil sauce to the skillet. Stir and thin it down by adding 1/2–1 cup of chicken broth periodically. This should take 6–7 min on medium.
  • Meanwhile, add 12oz of whole wheat spaghetti to the boiling water.
  • Separate the florets from the broccoli crowns, submerge them in water and set aside.
  • Add 1 tsp rosemary +1 tsp Oregano + 1/2 tsp thyme+ 1/4th tsp pepper+ 1 teaspoon salt and stir and let it sit for 5 minutes with a lid.

  • Pasta is probably done by now (8–10 min). Drain and set aside.
  • Put the submerged broccoli in the microwave and heat for 4 min.
  • Add sausages to the sauce and stir. Pasta sauce is ready.

  • Serve over the whole wheat spaghetti with steamed broccoli on the side. Garnish with grated Parmesan.

It takes 30–40 minutes to prepare this full-bodied meal.
