Herby Pesto Falafels with Vegan Tzatziki

Crunchy on the outside but warm and soft on the inside, these air-fried falafels are aromatic, bursting with flavors of fresh basil and every bite reminds me of eating pesto but surprised me in a delightful way 😄

Served with a creamy and tangy vegan tzatziki dip, this healthy, plant-based dish is perfect for a satisfying lunch or dinner.

Recipe:

Ingredients:

  • 2 cups fresh basil leaves
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon whole peppercorns
  • Juice of 1 lime
  • 1/2 cup almonds
  • 1/2 teaspoon sea salt
  • 2 cups cooked chickpeas
  • Cooking spray or oil for air fryer

Method:

1. In a food processor, combine the basil, garlic, olive oil, peppercorns, lime juice, almonds, and salt. Blend until a smooth paste forms.

2. Add the chickpeas and chickpea flour (optional) to the food processor and pulse until a coarse mixture forms.

3. Shape the mixture into 8–9 falafel patties.

4. Preheat your air fryer to 360°F

5. Spray the air fryer basket with cooking spray or brush with oil.

6. Place the falafel patties in the air fryer basket, making sure they are not touching.

7. Cook for 15–25 minutes, flipping halfway through, until the falafels are golden brown and crispy.

8. Remove from the air fryer and let cool for a few minutes before serving.

Enjoy your delicious and healthy pesto falafels! You can serve them in pita bread with your favorite toppings or on a salad.
