Mango Kheer with Dates

A yummy spin on the classic Kheer, this Mango and Date version is a delight for any festive season, gathering, or self-love. :) Made using sumptuous golden mangoes, soft Medjool dates, creamy vanilla-flavored almond milk, ghee, vermicelli, and nuts, this healthy and naturally sweetened pudding makes a dazzling summer dessert.
The star ingredients add great flavor to the Kheer and create a delightful experience for your taste buds, bringing a little sophistication to each smooth, creamy spoonful of it; you can’t help but fall in love with this luxurious Indian sweet.

MANGO KHEER WITH DATES RECIPE
Servings: 2–3
INGREDIENTS
- Mango chunks: 2 cups
- Dates: 6–7, soaked in hot water
- Vermicelli: 1/2 cup
- Unsweetened almond milk: 2 cups
- Coconut oil: 2 tablespoons
- Cardamom pods: 3–4, crushed to powder
- Pistachios/Almonds/Cashews: 3–4 tablespoons, roughly chopped
METHOD
- Purée the mango chunks and dates- Add mangoes, soaked dates, and 1/4 cup milk to a blender, and blend on low for 1-2 mins until smooth. Keep aside.
- Boil Vermicelli and Almond milk together: In a saucepan, add 1.5 cups of milk and bring to a boil. Add in the vermicelli and boil for 12 mins, stirring continuously until the mixture thickens.
- Add in the mango-dates purée: Reduce the heat on low, add in the mango purée to the creamy vermicelli mixture and stir until combined. Boil for 2–3 mins.
- Roast nuts in coconut oil: Heat 2 tablespoons of coconut oil in a different pan and roast the chopped nuts for 10–15 seconds on low heat.
- Add in the chopped nuts: Add the roasted nuts to the mango-flavored creamy mixture and stir well.
- Garnish with more nuts and dates. Serve and enjoy!
Serving suggestions
- This Kheer is usually served warm but tastes equally delicious when served chilled. I love mine chilled :)
- This Kheer is not too overwhelmingly sweet, but if you’re someone who loves desserts with an extra dose of sweetness you can add in some honey, sugar, or even maple syrup and enjoy.
- Lastly, the Kheer will continue to thicken as it cools down so feel free to add in more milk for a smoother consistency.
