Mango Tapioca Coconut Pudding

Also known as Mango Sago, this healthy version is a refreshing, tropical treat that’s as nourishing as it is delicious 😍.

By using wholesome ingredients like tapioca pearls, creamy coconut milk, and vibrant mangoes, this dessert brings a burst of flavor with every bite. My favorite is the subtle hint of cardamom as it adds a delightful aromatic note, making it the perfect indulgence for summer afternoons or pretty much any time! 🥭

Ingredients:

  • Tapioca small pearls: 1 cup
  • Frozen mango slices/ fresh mangoes: 2 cups
  • Coconut milk: 1/2 cups (plus extra for garnishing)
  • Cardamom powder: 2–4 teaspoons
  • Unsweetened milk: 1/2 cup

Method:

1. Cook the tapioca pearls: bring a pot of water to a boil and add the pearls. Cook for 5–6 mins until they turn translucent. Once done, drain and rinse them under cold water and set aside.

2. Prepare the mango mix: In a blender, combine the frozen mango slices, coconut milk, unsweetened almond milk and cardamom powder. Blend until smooth and creamy.

3. Gently mix the cooked tapioca pearls with the mango mixtures. Ensure the pearls are evenly distributed for a consistent flavor.

4. Pour the mixture into serving bowls or glasses. Garnish with a drizzle of coconut milk and some extra mango chunks for a vibrant finish.
