Vegan Carrot Halwa

Halwa is a traditional dessert, popular in South Asia and the Middle East, known for its rich, sweet, and often dense consistency. It’s typically made with ingredients like semolina, flour, cooked slowly with some kind of fat, sugar, and spices until it reaches a soft, melt-in-your-mouth texture.

Here, Carrot halwa, or “Gajar ka Halwa,” is a beloved variation made from grated carrots, simmered with almond milk, infused with coconut flour, rose water, cardamom and garnished with nuts. 😋

Recipe:

Ingredients:

  • 3 medium carrots, grated
  • 3 tablespoons of jaggery powder / sweetener of your choice
  • 1 cup almond milk
  • 1/2 cup coconut flour
  • 1/4 cup almond meal
  • 1/2 teaspoon cardamom powder
  • 1 tablespoon coconut oil
  • 3 tablespoons rose water
  • Chopped almonds and raisins for garnish

Method:
1. In a pan, heat coconut oil over medium heat. Add grated carrots and sauté until they soften.

2. Pour in almond milk and let it simmer. Stir occasionally to prevent sticking.

3. Stir in coconut flour and almond meal, and continue cooking until the mixture is well combined.

4. Once the carrots are cooked and the mixture thickens, add grated jaggery. Adjust the quantity based on your preference.

5. Continue to cook until the halwa reaches a desired consistency, and the excess liquid evaporates.

6. Add cardamom powder and mix well for a fragrant flavor.

7. Remove from heat and let it cool slightly.

8. Garnish with chopped almonds and raisins (roasted in coconut oil)

9. Serve warm / cold and enjoy your homemade Carrot Halwa 😋
