Vegan Choco-Oatmeal pancakes
VEGAN, HEALTHY, PROTEIN-PACKED
Topped with a luscious blueberry compote, a drizzle of rich dark chocolate, and a sprinkle of crunchy walnuts, these pancakes are a treat for your taste buds 😋
Recipe: Serves 2, makes 10 small pancakes
Ingredients:
- 1 cup rolled oats
- 1–2 ripe bananas, peeled and mashed
- 1 scoop vegan chocolate protein powder (mine is unsweetened)
- 2 tablespoons unsweetened cocoa powder or cacao powder
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsweetened almond milk (or any plant-based milk of your choice)
- 1 teaspoon vanilla extract
- Dark chocolate (melted for drizzle)
- Additional sliced bananas and blueberries for topping
Method:
1. In a blender or food processor, blend the oats into a fine flour-like consistency.
2. In a mixing bowl, combine the mashed banana, blended oats, protein powder, cocoa powder or cacao powder, baking powder, cinnamon, and salt. Mix well until all ingredients are incorporated.
3. Add the almond milk and vanilla extract to the mixture and stir until the batter reaches a smooth, pourable consistency. If the batter is too thick, add more almond milk a tablespoon at a time until it reaches your desired consistency.
4. Gently fold in the blueberries, being careful not to break them.
5. Heat a pan/skillet over medium heat and lightly grease it with a small amount of oil.
6. Spoon the batter into the skillet, forming small to medium-sized pancakes.
7. Cook the pancakes for 2–3 minutes on each side, until they begin to bubble and the edges start to set. Flip the pancakes and cook for another 1–2 minutes until both sides are golden brown.
8. Serve the Chocolate Oatmeal Pancakes warm, topped with additional sliced bananas, (or blueberries), and a drizzle of melted chocolate if desired.
