The “cowboy casserole” originated as a hearty, one-pan meal made over open flames on cattle drives across the American West. Traditionally filled with ground beef, beans, corn, and topped with a crusty layer of cornbread, it was designed to fuel hungry cowboys after long days on the trail.

This vegetarian spin honors that rustic spirit while bringing in smoky, savory flavors using plant-based ground “beef” and fire-roasted vegetables. Fun fact: Cowboy casseroles became a popular household staple in the 1950s with the rise of quick-assembly casseroles, often using canned soups. Our version skips the cans and adds flavor from scratch — no campfire needed!
