I spent so much time and energy cooking for my two boys, I didn’t know how I would fill the void once they left for college
“Honey, are you sure you don’t want me to make more meat for you to bring?” I asked my older son a few days before he was leaving for his junior year of college.
“No, mom, I’m good. I think I have plenty,” Stefan replied, chuckling at the sight of plastic food containers chock full of seasoned ground beef lining our kitchen counter.
“I also made some of those banana oatmeal chocolate chip cookies, but I forgot to add the protein powder. Your brother is going to kill me!” I said in mock fear.
My younger son, Ivan, had been on an “I-must-eat-massive-amounts-of-protein” campaign ever since he transformed from a pudgy youngster into a lean, muscular teen in high school.
Now, the youngest was off to college too, and my husband and I were about to become empty nesters. Something I couldn’t believe was already upon us. All of the “they grow up so fast” clichés were coming true. I knew they both needed to enter the next phase of life. I wanted them to go. But I still wasn’t ready.
