Home For 48 Hours
As an Expat spending 2 years in a foreign country away from loved ones and home, what would we do if we had only 48 hours in the country we call home (Singapore)?
Given that all the borders are re-opening with testing requirements a distant memory, we are going to skip past those boring bits and bring you on a 48 hour journey of how we cherished our time at home.
First off, like any home-sick person, the moment we wheels down in Singapore, we made a beeline for some home cooked food.
Although we spent a fair bit of time in one of the food capitals of the world, nothing beats a home made bowl of prawn noodles with a generous amount of crunchy bean sprouts and brought to a simmer overnight in a prawn broth.
Accompanying the dish is a pan fried fish cake with a delightfully crispy skin with a smooth texture within.
Comfort food to enjoy beside a peaceful fish pond against the therapeutic piter pater sound of the rain.
