Omelet Rice

I used to watch How I Met Your Mother in high school, religiously.

If you did too, you’d probably remember this scene when Lily gets really sassy when she reunites with her old high school friend, Michelle.

This basically happened when my old college roommate, Amy, came to visit me this week. But instead of getting sassy, we get really creative (and hungry).

Backstory on Amy:

Amy and I knew each other growing up in church. We never talked to each other… However, when college came around we both decided to go to UC Davis. We saw each other the day before at a wedding and said “maybe see you there!”. Turns out… we saw A LOT more of each other than we thought.

Amy started off as a bio student — very methodical in her ways and set on becoming a doctor. Starting our 3rd year, she started realizing that that didn’t really toot her horn as much as she thought.

After a lot of prayer, tears, support… Amy decided to start a fashion blog and go into marketing. She is amazing at what she does!

Fast forward to now, she still amazes me. She just got a job at Yelp to manage and develop their social media… what the heck! Yelp?! Come on somebody.

Anyways, when she came to visit me a few days ago, we watched this new Netflix series called Midnight Diner. It’s a really cute show featuring a chef who opens his restaurant at off hours, and the interactions between his customers. Every episode features a new dish, and we were deeply inspired by the Omelet Rice one enough to make it ourselves…

Our own version of Omelet Rice!
I need this again… it was so comforting and delicious.

Anyways… moral of the story is surround yourself with people who inspire you and bring out the best in you. Let their inspiration and victories be yours as well, so you can experience joy beyond your own life.

Xo,

Mon
