College is hard. Whether it’s a 10-page paper you have to write, studying all night for a difficult exam, or working on a group project that you got stuck dealing with, it’s a heavy workload. You’re on your own for the first time, and you have to do a lot of things for yourself that you never had to before. Plus, it doesn’t help that MTSU lacks on dining amenities. McCallie’s is gross, the KUC has long lines, and the STU only takes flex bucks! One thing that doesn’t have to be so hard is cooking. Here are some recipes that every college student needs to learn. They’re cheap, easy and fast to make, so if you’re a beginner here, no worries!

Yogurt and Berry Parfait

The Ingredents: 1 cup of vanilla Greek yogurt, 1/4 cup of blueberries/blackberries (your choice), and 1/4 cup of granola

For a total of 274 calories, this yogurt and berry parfait serves as an excellent source of calcium, potassium, Vitamin K and fiber. This recipe can serve as an easy snack or healthy breakfast. You should first add the yogurt, then pour in the other 2 ingredients, and simply mix the 3 together.

The Ingredients: 1 can of black beans, 1/2 of avocado, 1 cup of vanilla Greek yogurt, 1 package of pre-cooked brown rice, and a sprinkle of feta cheese

Next, we have a yummy burrito bowl that can serve as a great lunch when you’re on the go. First you should cook the brown rice for 90 seconds in the microwave and then heat up the black beans on the stove. Then, in a bowl, add the brown rice, beans, chopped up avocado, and Greek yogurt. Once this is all mixed together, add a sprinkle of feta cheese. This is good for you because it’s a good source of protein, fiber and a healthy amount of fatty acids for a total of 703 calories.

Apple Sandwich

The Ingredients: 1green/ red apple, 1/4 cup of granola, 1 tablespoon of peanut butter, 1/4 cup of dark chocolate chips

To start off this recipe, you have to cut the apple off into thin slices, then cut the middle part out with a small round cookie cutter. After that, spread peanut butter on the apple, add the granola and dark chocolate chips. This recipe is the perfect snack when you’re not quite ready for dinner yet, but you just want something to snack on. Plus, this recipe is 500 calories, which is the perfect amount for a snack that will keep you feeling fuller longer.

The Ingredients: 1 large egg, 2 tablespoons of cocoa powder, and 1 banana

Now we have a dessert to end with because we all know that’s our favorites.All you have to do is spray the mug with some cooking spray, add the egg, cocoa powder and pieces of banana and then microwave it for 1–2 minutes at a time. Finally, you can add a couple pieces of chocolate on top as a garnish for this lovely dessert.

College doesn’t have to be hard. These recipes can help you save money because you’re refraining from going out to eat, make you eat healthier because of the healthy ingredients, and teach you life long skills that will serve you use for many years to come.
