The holiday season is here, and Christmas is just around the corner.

Temptations are probably everywhere you turn! You don’t have to panic about being surrounded by treats and those extra ‘guilty’ pleasures we all know we love to indulge in.

Have your own treats up your sleeve and contribute healthier options to your social occasions — watch your friends and family ask you 100 times over for the recipe!

I have a few favourites that I turn to, and most involve fruit, but that can be dull when there is chocolate on the table!

Let me share with you a peanut butter treat that will have you being the life of the treats table, and you won’t have to blow your diet either.

Peanut butter is full of heart-healthy mono saturated fat; a great item to turn to when filling your fat macros.

It has protein as well as potassium and in moderation is definitely a healthy (and delicious!) option, so here goes:

No Bake Peanut Butter Snowballs

Ingredients

  • 1 1/2 cups of creamy peanut butter
  • 1/2 cup butter (melted)
  • 3 1/2 cups powder sugar (or a blended mix of splenda sweetener and cornstarch for a lighter calorie option)
  • 1 tsp vanilla extract (or vanilla sweetener if you like it sweet!)
  • 1 cup desiccated coconut for coating

No Bake Peanut Butter Snowballs Instructions

  • Mix butter, peanut butter, powder sugar and vanilla until combined in a large bowl.
  • Scoop peanut butter mixture out and begin rolling balls approximately 1 inch in diameter. Place it on a baking tray lined with baking paper and repeat until peanut butter mixture is gone.
  • Place the tray with all peanut butter balls into refrigerator for 30 minutes. This helps the mixture set and stay together properly.
  • Put desiccated coconut into a bowl, and carefully coat the peanut butter balls in the mixture until thoroughly covered.

Pro-tip for rolling peanut butter treats:

Getting snowball mixture all over yourself is part of the fun of making these little delights, but it isn’t the most practical thing when the phone rings or you need to scratch your nose.

Keep a small bowl of coconut oil on the bench, and rub it on your hands after every 2–3 snowballs rolled. Keeps the mixture off your hands, makes the snowballs nice and smooth, PLUS it’s incredibly moisturising and nourishing for your hands!

How To Serve No Bake Peanut Butter Snowballs

Serve alone, or with a chocolate dipping sauce if you feel like adding an extra cheeky treat.

You can also cover the snowballs in crushed peanuts, powdered sugar or cocoa — whatever takes your fancy!

The best part is, they’re pretty good for you in moderation, or at least a better option than much of the treats you’ll be tempted by this holiday season. Try them for yourself!
