Ever craved a big dessert, but knew you just didn’t have the willpower to stop after only one serving? Well, I get like that, ALL of the time; don’t let me near cake of any kind, especially the full fat, dairy filled kind. I can’t help myself 90% of the time, and that is my ‘diet’ weakness.

It is a good thing to recognise your weakness when it comes to food cravings, especially dessert. It isn't anything to be ashamed of, so don’t feel as though you have to hide it. We all have a weakness when we venture into changing our lifestyles . If you’re like me and sweet treats are your weakness too, have I got a trick for you!

Make Healthy, BITE SIZE Desserts.

That’s it. Seriously! There isn’t much to it, but delicious desserts that are only bite sized are perfect for smacking down any sweet cravings. Bonus is that they’re one serving so it is very hard to over-indulge… provided you hide the rest of the portions somewhere you can’t see.

I have a few favourites that are my go-to, and the bonus here is that they’re quite healthy options. Substitution is key to making classic recipes a little less calorie dense, but just as tasty! Lamington anyone? Try the below and see what you think!

Ingredients for Lamington Dessert Bites

[vegan, gluten free]
1 cup Medjool dates, pitted
1/4 cup cocoa powder, unsweetened
1/2 cups almonds, raw
1/4 cup coconut flaked, unsweetened
1.2 cup waknutes
1tbsp water
1 tsp vanilla

Instructions For Lamington Dessert Bites

  1. Add all ingredients to a food processor and combine for 2–3 minutes. The mixture will look crumbly at first, but will slowly come together. You should stop the mixer when you can see the mixture become a bit sticky. You should be able to roll it into balls.
  2. Roll the mixture into approx 14 balls and immediately roll in the flaked coconut as you go. If you wait too long here, the coconut won’t stick!
  3. They require zero cooking, so store at room temperature or in the fridge for up to 3 weeks. Super quick, super tasty!
