Super Simple Scrambled Eggs

Two ingredients, too easy!

A cooked breakfast is usually saved for the weekends, when you have lots of time and energy to prepare. This simple egg scramble is here to change your mind — and change your life!

Eggs, spinach, and water.

Ready in less than 5 minutes, this easy egg scramble can also be customised with your favourite sides so you can make it fit your macros and satisfy your tastebuds.

Ingredients

All you need for this protein packed breakfast is two (2) eggs, a handful of spinach (or two!), and one (1) tablespoon of water, plus a microwave safe mixing bowl & a fork or whisk (for mixing).

Directions

  1. Crack your eggs into a mixing bowl, and add one tablespoon of water before using a fork or whisk to scramble them together.
  2. Add in your spinach, and stir until the spinach is coated with the egg mixture.
  3. Put the egg & spinach mix into the microwave for 90 seconds, remove from the microwave to stir (make sure to scrape the egg mix down from the sides of the bowl), then return to the microwave for a final 90 seconds.
  4. Remove from microwave carefully (the bowl might be hot!) and you’re ready to eat.

Serving Suggestions

Add some quality carbs by chopping sweet potato into cubes & microwaving for 1–3 mins (until soft). Set aside while cooking your eggs, then mix together before eating.

You could also toast some low carb bread and serve eggs on toast, or even make it into a sandwich for breakfast on the go.

Add a little extra flavour with a sprinkle of parmesan cheese, or try Brewer’s Yeast for a dairy free alternative that’s high in mood-boosting B vitamins.

Or to really kick start your day, a squirt of hot sauce is a spicy way to get your metabolism revving in the morning!
