You don’t need sugar, you don’t even need processed flour. Swap out these diet don’ts for healthier alternatives, and you have yourself a new breakfast that won’t hurt your health and fitness goals.
One ingredient makes it possible — coconut flour!
I love to eat waffles, and that can be a problem when I am trying to stick to a strict diet and fitness regimen. Coconut flour has saved my butt countless times over. It’s high in fibre, protein and healthy fats.
Coconut flour is free from wheat and other grains and is low in sugar too, making it low GI and definitely lower in calories than the more common white flour. It makes for a great alternative when you do bake, or want a waffle breakfast.
Below, I share my go to healthy waffle recipe so you can enjoy it too!
Ingredients for coconut waffles
- 4 eggs separated
- 2 tbsp coconut oil, melted
- 1 tsp vanilla (optional — can use stevia, or another flavour depending on taste)
- 1/2 tsp baking soda
- pinch salt
- pinch cinnamon (can use any spice)
- 1/3 cup almond milk or coconut milk (can use any milk, but these help with keeping them fluffy)
- 1/4 cup sifted coconut flour
Instructions for coconut waffles
- Put egg whites in a mixing bowl and beat to stiff peaks. Set aside
- In a separate bowl, stir together all remaining ingredients (including egg yolks) until almost all lump are gone.
- Gently fold in the beaten egg whites to the mixture
- Cook according to waffle maker’s instructions. 1/2 a cup of batter is usually a safe bet, and you’ll probably get 3–4 waffles from the mix.
At home, in your own kitchen, you can cook up this delicious meal option without wondering “how will I fit this in today?”.
