Humble Roots

This is not a story of kings, nor is it a story of magic.

This story, is of a humble — trod upon, discarded, riddled with dirt — vegetable: the onion.

Coming in greens and whites, golds and sometimes reds and purples. Large and small, pearl-shaped and just as valuable. Without these precious elements that come from deep within our Earth, we would never know true flavor.

So the next time your knife slices the flesh of one of these vivacious roots, remember to thank them.
