KAISERSCHMARRN (Emperor’s Schmarrn)

The Autro-hungarian Emperor Franz Josef loved simply pastry dishes and his favorit dessert seemed to be the famous « Kaiserschmarrn » made from eggs, flour, milk and sugar. Rumour suggests that the thanks for this dish ought to go to a failed and shredded omelette. Whether or not that is true, the important thing is that the recipe has been passed down to us.
Ingredients
- 150 g of flour
- salt
- 4 spoons of sugar
- 250 ml of milk
- 50 g of raisins
- 100 g of butter
- powdered sugar
Preparation
- separate eggs
- beat egg whites until stiff
- mix together egg yolks, suger and salt
- add the flour and milk
- gently fold in raisins and whipped whites of eggs
- melt 60 g of butter over medium heat in a frying pan, add the paste and fry it until both sides are gold-colored.
- using two forkes, tear batter into pieces , add the rest of butter and continue cooking briefly
- strew with powdered sugar and serve with cranberry-jam !
