KAISERSCHMARRN (Emperor’s Schmarrn)

The Autro-hungarian Emperor Franz Josef loved simply pastry dishes and his favorit dessert seemed to be the famous « Kaiserschmarrn » made from eggs, flour, milk and sugar. Rumour suggests that the thanks for this dish ought to go to a failed and shredded omelette. Whether or not that is true, the important thing is that the recipe has been passed down to us.

Ingredients

  • 150 g of flour
  • salt
  • 4 spoons of sugar
  • 250 ml of milk
  • 50 g of raisins
  • 100 g of butter
  • powdered sugar

Preparation

  • separate eggs
  • beat egg whites until stiff
  • mix together egg yolks, suger and salt
  • add the flour and milk
  • gently fold in raisins and whipped whites of eggs
  • melt 60 g of butter over medium heat in a frying pan, add the paste and fry it until both sides are gold-colored.
  • using two forkes, tear batter into pieces , add the rest of butter and continue cooking briefly
  • strew with powdered sugar and serve with cranberry-jam !
