蘇格蘭威士忌「規矩」，由一個叫蘇格蘭威士忌協會的組織制定(簡稱SWA)，歷史悠久，可想見有多少維護老規矩的老傢伙。
The ‘rules’ of Scotch whisky are set by an organization called the Scotch Whisky Association, which is over 100 years old, so you can imagine how many old distillery owners there are who uphold the old rules, and how many people there are who defend them.
威海指南針酒廠第一版香香樹威士忌，用高齡195歲的法國橡木條，插入酒桶改變陳釀的威士忌香味，這種道叛經離實驗法，惹惱了蘇格蘭威士忌協會，聲稱這瓶酒違背蘇格蘭威士忌協會認可的釀酒傳統規矩，揚言禁止這款威士忌叫做「Scotch」，逼得威海指南針酒廠只好停產第一版。
The original Spice Tree was aged using 195 year old French oak staves which were inserted into the whisky barrels. … The SWA dictated that this method was not appropriate for the production of Scotch Whisky so compass box discontinued production.
但香香樹威士忌獨特的複雜香氣與口味，在專業評論家與市場上都得到壓倒性好評，威海指南針酒廠以釀酒大師約翰葛雷瑟（John Glaser）為首的「叛客」們，研發出一種遊走在蘇格蘭威士忌協會規矩邊緣的釀酒方式，推出了第二版的香香樹威士忌。
However, due to the unique and complex aromas and flavours that have been overwhelmingly praised by both professional critics and the market, the ‘rebels’ at Compass Box distillery , led by master John Glaser, have developed a way of making whisky that skirts the boundaries of the SWA’s rules, and have released another version of the whisky.
