When you are aiming to optimise your nutrition to compliment your athletic performance, or simply if you wish to eat healthily for the purpose of fulfilling a balanced lifestyle, your meals do not have to be boring! Many people enjoy the simplicity of plain meat and vegetables, however, we know that more often than not, everyone likes a bit of variety.

Not only that — food is for enjoying — and let’s face it, steamed broccoli and chicken breast holds very little excitement after a long day at the office or gym. It is possible to easily recreate well known delicious recipes with macro friendly ingredients. Here is one for you to try:

Ingredients:

Aims to serve 2

  • 300g lean turkey steaks
  • 2 free range eggs
  • 100g rolled oats
  • Paprika
  • Salt & pepper
  • 1 tbsp Extra virgin olive oil (for frying)
  • 1 cup white basmati rice (or brown)

Sauce:

  • 1 sweet red bell pepper
  • 1/2 white onion
  • 6 medium spring onions
  • 1 can of light coconut milk (low fat)
  • 1 tbsp dark soy sauce
  • 1 tbsp honey
  • 1 1/2 tsp curry powder

Method:

Step one: Preparing the curry sauce & rice

  • In a pan, fry all of the vegetables together (use a dash of water instead of oil to steam)
  • When softened, add the coconut milk, soy, honey and curry powder. Separately, add the rice to 300ml of boiled water — leave both to simmer while you prepare the turkey steaks

Step two: Turkey!

  • Whisk the eggs — in a separate bowl season the oats with salt, pepper & paprika
  • To batter, dip the steaks in the egg mix and transfer over to the seasoned oats (make sure to coat all of the meat)
  • To cook, add the oil to a hot frying pan & place the turkey flat — cook thoroughly on each side (the oats should be golden brown in colour)
