Cheese-Less Veggie Quesadilla

A cheese-less quesadilla??!!

Hey I’m the president of the “ a-little-cheese-makes-everything-taste-better “ club, but sometimes a girl just wants a lighter, healthier, less bloaty, vegan-friendly meal…. WITH FUN QUESADILLA VIBES.💃

The secret to making a quesadilla without cheese:
- vegetarian refried beans +
— lazy guac 🥑

These ingredients become the nutritious “glue” to keep your 2 quesadilla sides together. The beans provide plant-protein + the guac is packed w/ healthy fat + they both give you a heavy dose of satisfying fiber.

The best part of this recipe… it takes just 10 minutes to make AND… you can stuff 1 FULL CUP OF VEGGIES in the quesadilla so it truly is a nourishing, balanced meal.🙌

Now that’s a quesadilla I want in my weekly meal rotation!

INGREDIENTS(makes 1 quesadilla)
— 1/2 avocado
— 1/2 lime, juiced
— avocado oil spray
— 1/2 cup vegetarian refried beans
— 1 large sprouted whole grain tortilla (or 2 small, taco-sized)
— 1 cup chopped grilled veggies (peppers, zucchini, broccoli, etc.)

DIRECTIONS
1. Make the lazy guac: In a small bowl, mash avocado & stir in lime juice. Set aside.
2. Lightly mist a large skillet with avocado oil spray & place over medium heat.
3. Spread refried beans evenly over the tortilla. Top with grilled veggies and half of the guac.
4. Fold the tortilla in half, lightly pressing it together, and place in the skillet. Cook for 4 minutes on each side, or until both sides are lightly browned.
5. Slice the quesadilla into 3 sections. Serve with remaining guacamole & your favorite optional toppings such as pico de gallo, hot sauce, cilantro, etc.

Nutrition info: 400 calories, 15g fat, 2g sat fat, 57g carbs, 10g fiber, 0g added sugar, 16g protein

⚡️Time hack: Buy pre-grilled veggies from your grocery store deli or salad bar.
🧀Get your cheese fix: If you just can’t get behind the idea of a quesadilla sans cheese, add 2 tablespoons of shredded cheddar cheese on TOP of your quesadilla.
