An unexpected and overwhelming response to my earlier post encouraged me to write another one within 2 days. Online and offline, many people asked me to put up a vegetarian recipe. So this post is dedicated to the royal ingredient of any vegetarian menu — Paneer.

Paneer Bhurji is a quick and simple dish. I often make this on weekdays after long office hours when there is a desire to eat something different from the daily vegetables. The photo on the head of this post is what I prepared today. Compared to the earlier chicken post this is an easy to prepare recipe. Do let me know how you found your version of the bhurji.

Preparation Time: 20-25 mins

Ingredients:

  1. Paneer — 500 gm

2. Onion — 1

3. Tomato — 1

4. Green Chilies — 1-2 finely chopped (depending on the size of the chilly)

5. Ginger-garlic paste — 1 tsp

6. Coriander powder — 1 tbsp

7. Turmeric powder — 1 tsp

8. Kitchen king powder (optional) — 1 tsp

9. Milk — Half cup

10. Fresh coriander leaves — chopped

11. Salt to taste — I used around 1.5 tsp

Method

  1. Wash the paneer and crumble it with your hands [get your hands dirty ;)]

2. Finely chop onions and tomato in the mentioned quantity above.

3. Heat oil in a pan (around 2-3 tbsp). Add onions to it.

4. Let it cook for 5 minutes and toss in the green chillies.

5. Once the onions start turning brown add in the spices and mix properly.

6. If the spices stick to the bottom of the pan, add some water and mix properly.

7. Keep stirring the spice mix at small intervals for 5- 10 minutes till the oil separates from the mixture

8. Now add milk and stir the mixture.

9. Add salt to taste.

10. Let the mixture stay on the flame for another 3-4 minutes.

11. Lower the flame and add the crumbled paneer to it. Mix well.

12. Let it stay for another 2 minutes.

13. Remove the flame. Add the chopped fresh coriander leaves and mix lightly.

Serve hot with warm chapatis. Dinner is ready!
