10-Minute Summer Noodles

A noodle dish so good it doesn’t even contain noodles and you won’t notice!

Last month, my partner and I set out to do a two-week anti-inflammatory eating challenge. We both had seen a dip in our energy levels and wanted to take a proactive approach to feeling better. We thought anti-inflammatory foods would help us to boost our immune systems.

After the initial shock of feeling like this decision was a fool’s errand and I was giving up all of the simple pleasures of life, I calmed down and started to think about the possibilities.

We had zucchini and a few anti-inflammatory seasonings, pure coconut milk, and a spiralizer! Needless to say, it was on like Donkey Kong.

It is an absolute truth when I tell you that my tongue and belly thanked me after eating this meal.

Best part? It took​ ​10 minutes from beginning to end.

Zoodles in Creamy Coconut Sauce

​For this anti-inflammatory challenge, we are doing light to no-cook plant-forward meals. Think raw vegan with a little wiggle room. The only thing I did on the stove for this recipe, was lightly warm the sauce.

This dish ate like fine dining and my body loved me for it afterward.
