I once had a friend in the military who lived off base. A few friends and I would come over to her home and we would each be asked to bring a few packages of dark meat chicken and a six pack. I would always bring her a few jumbo packs of legs, and she would cook them up into a pungent garlicky smelling sauce that was lip smacking good. We would eat well that night and it was always a nice change from the sameness of our chow hall food. The dish she cooked I knew well was Chicken Adobo.

Adobo is something that I grew up eating as a kid in San Diego. If you had friends who’s relatives made Adobo, it was common to be invited to dinner and this boy didn’t have to be asked twice. Adobo is a dish that can be used for a variety of meats (Pork, Beef…
