Tocino means “bacon” in Spanish, and in the Philippines, Tocino refers to sweetened and cured pork belly. Tocino is often cured with a sugar water solution, and is sometimes marinated with pineapple juice. It is red in appearance not unlike Chinese barbequed pork.

Tocino is often served as the popular breakfast or lunchtime combination with a garlic fried rice and an egg (sunny side up). I’ve served Tocino with plain white or sushi rice and have had a great dinner — simple and filling. I imagine it would be good in a steamed pork bun, in a wrap, or used as a taco filling as below. On it’s own it can be eaten with toothpicks as an starter.

Ingredients

  • 2 pounds pork (shoulder, belly or butt, cut to ¼-inch thick cubes) *Note
  • 1 cup brown sugar
  • 1 tbsp white table salt
  • ¼ tsp black pepper
  • 3 cloves garlic minced very fine
  • 2 tbsps soy sauce
