Morning Glory Muffins are a mainstay of the bakery, have you enjoyed the fruitful carrot cake-like goodness?

Morning glory muffins are made with a little bit of everything: whole wheat flour, carrots, apples, raisins, walnuts, orange juice, coconut, and sometimes wheat germ. Look up this recipe and you will see variations all over the map. The name of the muffin comes from the yellow color that is derived from the carrot in this recipe.

Ultimately the Morning Glory muffin is meant to be seen as a harvest muffin comprised of the bounty of the garden. All variations of this have Carrot and Apples in it, and often have raisins or cinnamon to add a flavor boost.

Morning Glory Muffins were created by Pam McKinstry owner of the “Morning Glory Cafe” in Nantucket. She created the original Morning Glory Muffins in 1978 and in 1981, Gourmet magazine printed her recipe. It was chosen by the readers as one of the best recipes of the past 25 years in the magazines 1991 edition.

I enjoy the basic version of the Morning Glory Muffin but I’m not above tampering with a classic. I’ve enclosed below my own version of this recipe so that I can offer examples of a classic and my attempt at an upgrade.
